Ingredients

  • 4 cups fresh or canned peaches sliced or diced
  • 1 tablespoon lemon juice
  • 1 cup granulated sugar
  • 2 teaspoons cornstarch
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 1 cup milk
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the Oven:
  • Preheat your oven to 350°F (175°C). Grease a 9-inch baking dish or casserole dish lightly with butter.
  • Prepare the Peach Filling:
  • In a large bowl, combine the sliced peaches, sugar, lemon juice, cornstarch, cinnamon, and nutmeg. Stir until well-mixed and the peaches are evenly coated. Pour the peach mixture into the prepared baking dish.
  • Make the Cobbler Topping:
  • In a separate bowl, whisk together the flour, baking powder, and salt. Add the melted butter, milk, and vanilla extract, and stir until a thick batter forms.
  • Assemble the Cobbler:
  • Drop spoonfuls of the cobbler batter over the peach filling. Do not worry about covering the entire surface; the batter will spread and puff up as it bakes.
  • Bake:
  • Bake in the preheated oven for 40-45 minutes or until the topping is golden brown and the peach filling is bubbling around the edges.
  • Cool and Serve:
  • Allow the peach cobbler to cool for about 10 minutes before serving. For added indulgence, serve with vanilla ice cream or whipped cream on top.

Notes

  • Peach Variety: Fresh peaches work best for this recipe, but if they’re not in season, you can also use frozen peaches. Just be sure to thaw them completely and drain any excess liquid before using them in the cobbler.
  • Topping Texture: For a crispier topping, you can add a sprinkle of sugar on top of the batter before baking. This will create a slightly caramelized crust that adds an extra layer of flavor.
  • Serving Suggestions: For an extra indulgent treat, serve your peach cobbler with a scoop of vanilla ice cream, whipped cream, or a drizzle of caramel sauce. The warm cobbler and cold toppings make the perfect balance.
  • Sweetness Adjustments: If you prefer a less sweet dessert, you can reduce the amount of sugar in the filling. Depending on the ripeness of your peaches, you might find that the natural sweetness is enough.
  • Make-Ahead Tip: You can prepare the peach cobbler filling and the topping separately ahead of time and store them in the fridge. When you’re ready to bake, simply assemble the two components and bake as instructed for a quick and easy dessert
