Instructions
Heat olive oil in a large pot over medium heat. Add onions, garlic, and bell pepper, sautéing until soft.
Add the beef cubes, searing them until browned on all sides.
Stir in tomato sauce, beef broth, cumin, paprika, oregano, salt, black pepper, and bay leaf. Bring to a simmer.
Cover and cook on low heat for about 45 minutes, stirring occasionally.
Add potatoes and peas (if using). Continue cooking for another 15-20 minutes, or until potatoes are tender.
Remove bay leaf and adjust seasoning if needed.
Serve hot with rice or crusty bread.
Notes
For extra depth of flavor, brown the beef before adding other ingredients.
Let the stew simmer longer for even more tender meat.
Serve with white rice or warm bread to soak up the delicious sauce.
