Ingredients
  

  • 1 lb Beef stew meat Cut into chunks
  • 2 tbsp Olive oil
  • 1 medium Onion Diced
  • 3 cloves Garlic Minced
  • 1 tsp Bell pepper Diced
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1/2 tsp Oregano
  • 1/2 tsp Salt Adjust to taste
  • 1/2 tsp Black pepper
  • 1 tbsp Tomato paste
  • 2 medium Tomatoes Diced
  • 2 cups Beef broth
  • 2 medium Potatoes Peeled and cubed
  • 1/2 cup Green olives Optional
  • 1/2 tsp Red pepper flakes Optional, for heat

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onions, garlic, and bell pepper, sautéing until soft.
  • Add the beef cubes, searing them until browned on all sides.
  • Stir in tomato sauce, beef broth, cumin, paprika, oregano, salt, black pepper, and bay leaf. Bring to a simmer.
  • Cover and cook on low heat for about 45 minutes, stirring occasionally.
  • Add potatoes and peas (if using). Continue cooking for another 15-20 minutes, or until potatoes are tender.
  • Remove bay leaf and adjust seasoning if needed.
  • Serve hot with rice or crusty bread.

Notes

  • For extra depth of flavor, brown the beef before adding other ingredients.
  • Let the stew simmer longer for even more tender meat.
  • Serve with white rice or warm bread to soak up the delicious sauce.
